FBP40318 Certificate IV in Food Processing (Brewery Operations)
The Brewery Operations program provides both a pathway for Certificate III in Micro Brew and Brew Pub graduates to gain Brewer and/or Brewery Operations Management employment in the expanding craft/microbrewery and brewpub industries.
The program also provides a vehicle for experienced Brewers to formalise their existing skills and knowledge into a formal nationally recognised qualification.
The Brewery Operations program provides industry specific, hands on training being delivered in full operational commercial breweries ensuring all content is relevant and is specific to current beer related or brewery related businesses.
Learning Outcomes
Apply and demonstrate the techniques of brewing
Demonstrated knowledge and understanding of the brewing process
Demonstrated knowledge and understanding of brewery equipment and technological practices including packaging and handling
Undertake and utilise accurate laboratory analysis and techniques
Accurately assess beer quality and apply sensory analysis techniques
Develop and refine beer recipes for the market.
Understand the history and evolution of the Australian brewery industry
Develop and implement business strategies related to brewery operations
Develop and implement marketing strategies related to brewery operations
Demonstrated knowledge of government legislation and regulations related to the industry
Apply professional workplace management skills into the work place
Understand and implement process improvement strategies and tools into the workplace

Brewery Classroom Delivery
20 weeks, full time, on site commercial micro/craft brewery
40 weeks, part time, on site commercial micro/craft brewery
Workplace Delivery – 12 months, part time, on site at workplace
Workplace Delivery – 12 months, part time, on site at workplace
